Not long after the demise of Gray Kunz’s Manhattan restaurant Grayz, chef Martin Brock found a new professional home as chef de cuisine at San Francisco’s acclaimed Restaurant Gary Danko. He returns to New York to serve a select few at a one-night class ($95) at De Gustibus Cooking School on June 6 from 5:30 pm to 8:00 pm. Brock prepares a six-course menu, including a crispy egg with polenta and mushrooms, as well as a guinea hen breast with orzo, peas, and asparagus, and shares his insights on cooking.
