Produced by sustainably farmed Acipenser naccarii sturgeon raised in naturally cold ponds near Granada, Spain, PSN Almas Ara caviar (www.artisanalfoods.com) is as close to organic as caviar comes. (Almas Ara cannot be certified as such because part of its feed comes from wild sardines.) The taste is pure and subtle, combining the minerality of the sea with cool cucumber. Priced at $75 for 30 grams or $140 for 50 grams, the caviar is now available in the United States through Las Vegas–based Artisanal Foods, a company that supplies top chefs with black truffles, saffron, bellota ham, and other elusive foods.
