A cantilevered, fluorescent-blue swimming pool juts from a rooftop deck at the Joule, a Starwood Luxury Collection hotel that opened in downtown Dallas in May. After spotting the pool from 10 stories below on Main Street—and encountering two massive rotating gearwheels in the hotel’s lobby—you might take in stride the round beds and zebra-print carpet in the Demi-Joule guest rooms and the vibrant red pool table in the Penthouse Suite. If Charlie Palmer at the Joule (the hotel’s fine-dining venue) and the original Neiman Marcus (150 paces up the block) cannot tempt you from the suite, you can order Palmer’s bison rib eye through room service and have the Joule’s personal shopper at the department store deliver a pair of Manolo Blahniks to your door.

Also new in Dallas is the Ritz-Carlton, where the city’s most prominent chef, Dean Fearing, has opened its hottest restaurant. The bar at Fearing’s Restaurant has become a gathering place for Dallas locals and guests of the hotel, which features 218 rooms and a 12,000-square-foot spa.

A new spa and restaurant are among the additions to the Stoneleigh Hotel & Spa, which recently reopened in uptown Dallas. Originally decorated by Dorothy Draper in the 1930s, the property’s penthouse was reinvented by the late designer’s namesake firm and now rents for $20,000 per night.
