Worth knowing: In 1989, British wine writer Hugh Johnson and friends decided to revive and restore to glory the Hungarian wine once revered by monarchs such as Louis XIV and Catherine the Great. Of the many excellent wines from their Royal Tokaji Wine Co., the Essencia is the rarest and most exquisite, created only from the free-run juice that accumulates as the botrytised aszú (shriveled) grapes await crushing.
