One&Only The Palm

Dubai—a city famous for resorts that are very tall, very large, and occasionally shaped like ships at sea—has a peaceful new refuge. Opened in the fall, One&Only The Palm is a low-rise, low-bling sanctuary of pools, gardens, and beaches, located a mile from Dubai on one of the Palm Jumeirah islands in the Arabian Gulf. Its Moorish-style manor house contains just 35 rooms and suites, each with its own outdoor area. The rest of the 90 accommodations, some of which feature plunge pools or direct beach access, are spread across six mansions and four private villas.

An evening at The Palm might begin with dinner at Stay, one of the resort’s three restaurants developed by Michelin three-star French chef Yannick Alléno. Meals at Stay—an acronym, more or less, for "the Simple Table of Yannick Alléno"—often conclude at the "pastry library," where guests select ingredients and watch chefs prepare their desserts. After dinner, guests can wander back to the vast main pool to lounge on sunbeds, slip onto a circular divan beside a cabana, or step up to the terrace for a traditional end to an Arabian evening: a few puffs of sweet, fruity shisha from a hookah pipe.
