Abreu Vineyards to Host Pairing Dinner at Del Frisco’s Double Eagle Steak House in Chicago

On May 1, Brad Grimes, the winemaker at Napa Valley’s Abreu Vineyards, will host a dinner at Del Frisco’s Double Eagle Steak House in Chicago, pouring several of his California cabernet sauvignon–based blends. Abreu Vineyards is known for its exceptional wines and extremely limited production of less than 500 cases of each release. The five-course pairing menu—created by the Chicago eatery’s chefs Jim Teutemacher and David Holben—will begin with amuse-bouches, including Montrachet goat cheese mousse and foie gras with wagyu Wellington served with 2007 Rothwell Hyde, a barrel selection usually available only by mailing list. Wines from Abreu’s 23-acre Madrona Ranch will anchor the next three courses, with red wine–braised octopus and langoustine paired with the 1993 and 1994 Madrona Ranch. The 1995, 1996, and 1999 vintages will complement pan-roasted, wild boar chop, followed by Colorado lamb loin persillade and roasted tenderloin herb de Provence paired with the 2003 and 2005 vintages. The evening ends with chocolate red-wine molten cake, three-hour roasted grapes, smoked brie, and black-pepper Chantilly cream teamed with the 2004 Thorevilos and 2006 Cappella, named for Abreu’s 22- and 6-acre vineyards, respectively.
