Alain Ducasse whets Sin City’s appetites with a Mediterranean splash at Rivea (alain-ducasse.com), his new restaurant on the 64th floor of the Delano Las Vegas. The restaurant features a refreshingly simple menu from one of Michelin’s most decorated chefs, including Provençal caponata with capers and pine nuts, line-caught striped bass in a minestrone reduction, and a crisp chickpea socca stuffed with classic niçoise salad (shown). This venue is the third for Rivea, which debuted in Saint-Tropez two years ago before expanding to London last year. 

The Las Vegas location evokes the French Riviera with its maritime palette of blues and yellows and an illuminated wall of cascading glass that mimics the sea. Ducasse also unveiled the adjacent Skyfall Lounge, which, like the restaurant, offers dazzling skyline views.
