Husband-and-wife team Hiro Sone and Lissa Doumani have sizzled for 17 years in the kitchen at Terra, their James Beard award–winning restaurant in California’s Napa Valley. Now the chefs, who met in 1983 while working at Spago Beverly Hills, are increasing their culinary family with a second restaurant, Ame (415.284.4040), which opens in November at the new St. Regis hotel in San Francisco.

 

At the French-Asian-style Terra, Japanese-born Sone serves as executive chef, while Doumani, a California native, supervises pastisserie and designs specialty dishes based on West Coast fruits and vegetables. Ame will have a sashimi bar and a larger menu than that of the St. Helena establishment. “Stylistically, we’ll be the same as Terra—the same stocks, for example,” says Doumani. “But we’ll be serving a lot more fish and shellfish that you can get only in San Francisco.” The couple and their new setting promise to be a match made in heaven.
