Michael Mina’s Cognac Dinner at Aria in Las Vegas Will Be a Jackpot for Foodies

Gourmands looking to explore the savory side of Sin City need go no farther than the Hardy Cognac Dinner at Aria Resort & Casino in Las Vegas on September 24. The five-course affair at the resort’s Bardot Brasserie will feature the culinary mastery of chef Michael Mina and a tasting of Thoroughbred—the extremely rare Cognac commissioned exclusively for Aria from A. Hardy U.S.A., of which only 29 bottles exist in the world.

The singular expression is culled from 20 Cognacs that were made at the end of World War II. Each one was distilled from grape varietals from the Grand Champagne region in France and sequestered in a cellar cave reserved for Hardy’s finest fermentations—aptly named Paradis. The resultant blend is only available at Aria and will highlight what promises to be an already remarkable meal by chef Mina.

Guests will taste Thoroughbred in prelude to the rest of the evening’s epicurean enticements. Following a selection of canapés, the tasting menu commences with a flurry of fruits de mer. The seafood—served both smoked and raw—will be paired with a gently effervescent Chartogne-Taillet Cuvée Mina Brut Merfy Champagne with its crisp accents of apple and lime. Prime steak tartare made with sauce verte, organic egg, and Burgundy black truffles follows along with a glass of VieVité Extraordinaire 2013 Rosé Côtes de Provence, which exhibits notes of peach, black currant, and apricot. The third course returns to the sea with salt-crusted wild salmon dressed with a smoked tomato vinaigrette and served with tarbais beans and accompanied by the 2011 Louis Jadot Nuit-Saint-Georges Pinot Noir for its full flavors of ripe fruit and hints of oak. Next, taste buds take flight with duck a l’orange in formation with baby turnips and foie gras. Pampering the palate alongside the poultry will be a Beaulieu Vineyard 2010 "Georges de Latour" Private Reserve Cabernet Sauvignon Napa Valley, whose flavors of cassis, plum, and berries last long on the finish.

Rounding out the refined repast will be Bardot’s signature frozen Paris-Brest, chocolate macaron, and mille-feuille—desserts accentuated by the honey and toffee flavors of the Broadbent Malmsey Madeira that will be sampled alongside. The price for the Hardy Cognac Dinner is $450 per person. (aria.com)
