Thomas Keller to Open Ad Lib Pop-Up Restaurant in Napa

The renowned chef Thomas Keller will open a new pop-up restaurant, called Ad Lib, on January 21. The temporary eatery will reside within the Royal Oak restaurant at the Silverado Resort and Spa in Northern California’s Napa Valley. Keller—globally recognized for his French Laundry and Bouchon Bakery restaurants, both in nearby Yountville—and his team will focus on classic American dishes, with the attention to quality and detail for which the Thomas Keller Restaurant Group is known. Described by Ad Lib’s chef de cuisine, Michael Wallace, as “refined country-club” fare, the dishes on the menu will include such staples as a Caesar salad with Bouchon Bakery’s pain de compagne croutons and Keller’s trademark crispy Parmesan, tossed and mixed with dressing tableside ($17); a root-vegetable pot pie ($24); and a seven-layer coconut cake ($10). Daily specials will vary depending on the produce available from the French Laundry’s culinary garden, and Ad Lib will offer domestic and European wines alongside a full bar.
