A Top Parisian Chef Visits AnQi in Costa Mesa

Chef Daniel Rose of Spring, which has one of the most exclusive reservations lists in Paris, will temporarily close the esteemed restaurant in May to host a benefit dinner at AnQi in Costa Mesa, Calif. The May 1 dinner—which will benefit the James Beard Foundation and the Art Institute of California–Orange County Culinary School—will feature a four-course menu, along with an amuse-bouche and pass hors d’oeuvres. The meal will be prepared by Rose and AnQi’s head chef, Helene An, who is known for her signature Vietnamese-and-French fusion restaurants under her luxury hospitality group, House of An. 

The duo will combine classic French and Vietnamese fare. The starter will be a shellfish course by An, followed by pigeon-and-sweet-pea salad with fresh almonds and lobster by Rose. The main course, a collaboration by the two chefs, will be a whole roasted fish. For dessert, the chefs are planning a shared service—including dishes like cheesecake tiramisu and cherries stewed in red wine, olive oil, and chocolate—to emphasize the importance of shared dining experiences in both Vietnamese and French cultures.
