Pierre Gagnaire, the Michelin three-star chef with an eponymous Parisian restaurant and head chef at Sketch in London, has opened Twist by Pierre Gagnaire in Las Vegas’ City Center—his first American dining experience. Designed by architect Adam D. Tihany, the tables are elevated, giving guests expansive views of the Las Vegas Strip from its prime location on the 23rd-floor sky lobby of the Mandarin Oriental. A glass staircase leads to a suspended wine loft with hundreds of vintages, while more than 300 gold globes float above, illuminating the area as stars light the night.
Beyond the striking and somewhat playful decor, the innovative menu offers unique fusions of traditional French cuisine and modern culinary practices, which is the foundation of Gagnaire’s cooking style. Signature Gagnaire- style dishes include lobster poached in Sauternes infusion glazed with beurre noisette; filet mignon with roasted Malabar-pepper butter, chicory-leek fondue and Roquefort-braised lettuce; and potato ice cream and Osetra caviar. Among the tempting desert options are Kerala, a tandoori-style apple, caramel-cinnamon ice cream, and mango salad; and the Red Circle, a puff pastry that cradles almond paste, honey tuile, mascarpone cream nougatine, pear, fig, and mandarin marmalade.
