East Meets West in Yoshi

With 18 Michelin stars and a dozen restaurants in seven different countries, it’s difficult to imagine that chef Joël Robuchon has more to accomplish.  However, on December 2 the celebrated chef unveiled Yoshi, his first Japanese restaurant. Located in the Hotel Metropole Monte-Carlo in Monaco, Yoshi combines the talents of Robuchon, his executive chef Christophe Cussac, and Japanese chef Takéo Yamazaki. Yamazaki—who worked for Robuchon at L’Atelier and Château Robuchon in Japan—brings a sharp blade and a steady hand to the kitchen in crafting selections of sushi, sashimi, and maki. Also on the menu is ebi no soup, which is langoustine with kombu consommé.  The restaurant was designed by French interior architect Didier Gomez and with a decidedly Japanese influence that combines soft tones of white, ivory, and pale green with the hotel’s sleek, contemporary decor.
