Be one of the lucky few to secure a seat at an exclusive, five-course pairing dinner at La Mer restaurant at Halekulani hotel in Waikiki on February 4. For the event, Halekulani is flying in wines directly from two Bordeaux Grand Cru Classé estates in France—Château Rauzan-Ségla and Château Canon—and intends to host no more than 40 guests ($395 per person).
The evening will begin at 6:30 pm with a Champagne reception, featuring Delamotte Brut Blanc de Blancs NV, followed by a menu of hen consommé with foie gras, sliced scallops, and truffles; pan-fried veal sweetbreads in a hazelnut oil with lentils, bacon, and chanterelle mushrooms; a warm lobster tail served with chicken oyster, cèpe mushrooms, and toasted pine nuts; and more. Each course will be accompanied by two wines, including a rare 1966 Château Canon and a 1986 Château Rauzan-Ségla. The dinner will also coincide with Château Rauzan-Ségla’s 350th anniversary.
