It is no trifling matter that Pierre Gagnaire, arguably France’s greatest living culinary hero, has finally graced the United States with his presence. Twist (888.881.9367, www.mandarinoriental.com) is as unique as any of the chef’s seven overseas establishments, and a reflection of its playful, larger-than-life Las Vegas setting.
“People told me that in Las Vegas everyone eats only hamburgers and large Caesar salads,” says Gagnaire. “But after a lot of consideration I decided that, with 40 years of cooking behind me and the support of an American clientele who already appreciated my cuisine, I could find the right menu.”
The dish Gagnaire is most proud of is also the perfect example of his approach at Twist—clear, familiar flavors presented in innovative forms that instantly appeal to the palate. His Zezette is a mushroom broth enhanced by coconut milk, fresh herbs, and butter.
Located in the new Mandarin Oriental hotel at Las Vegas’ CityCenter, Twist opened its doors in December to reveal Adam Tihany’s breathtaking interior. More than 300 glass globes hang from the ceiling, while splashes of purple velvet and cream-colored leather hint at the delights to be found on the plate.
