Ultimo at the Venetian Las Vegas May Be Sin City’s Ultimate Dinner Party

Thomas Keller and 10 other top chefs combined culinary forces for the most epic meal in Vegas…

When culinary talents like Thomas Keller, Curtis Stone, Jérôme Bocuse, and Vikran Vij produce a culinary experience, it is always a meal to remember. But when those chefs (along with seven others) come to together for one night, it results in what may likely have been the grandest meal of the year. In December, 11 chefs each produced a dish for the grand banquet during Ultimo: Le Grand Voyage, a culinary weekend hosted by the Venetian Hotel in Las Vegas. The six-course meal included Keller’s California white sturgeon caviar, smoked trout gelée, King Richard leek panna cotta, and pumpernickel; chef Shaun Hergatt’s cured and chilled foie gras with nitro-spiced huckleberries and plum lucky sorrel; and Vij’s marinated lamb popsicles with fenugreek cream curry. Wines pairings for each course were courtesy of such world-class vintners as Metaphora, Memento Mori, and Dom Perignon. Beyond the culinary delights and Robb Report’s travel to Las Vegas aboard JetSuiteX, other highlights of the weekend included a hot-air balloon ride, Rolls-Royce drive down the Las Vegas Strip, and libations from Patron and Hennessey. Of course, 2016’s Ultimo experience sold out quickly, so be on the lookout for tickets to the 2017 event, which may be even hotter than they were last year: Keller is president of Team USA for the Bocuse d’Or international culinary competition and is fresh off of his team’s gold-medal victory.
