Unless you already knew better, approaching Islay, Scotland, from across the sea, one would never guess that this humble, sparsely populated Hebridean island produces the smokiest, most heavily peated single-malt scotches on earth. Yet many of its distilleries have household names—at least in the households of scotch aficionados. The island’s master distillers long ago turned to the burning of peat to prepare barley for whisky making, and they have maintained that tradition to this day.
