Robb Report Editors Name Las Vegas As World's Most Exceptional Destination For Steak Lovers

    Mario Batali’s Carnevino at The Palazzo Earns Top Honors Among 16 Steak Houses Sampled by Luxury Lifestyle Authority

    MALIBU, CA—(July 26, 2012) -- Citing the city’s “tectonic shift” away from formal fine dining and multicourse tasting menus to a focus on guests with more carnivorous tastes, the editors of luxury lifestyle authority Robb Report have named Las Vegas as “the best place on Earth to eat steak.”

    Featured in the August issue, the piece by contributing writer Brad A. Johnson notes that every major Las Vegas hotel and resort “is upping the ante with at least one glamorous steak house; the Palazzo hotel boasts four.”

    Las Vegas has surpassed great steak cities like New York City and Chicago with steak houses owned by internationally acclaimed chefs, the luxury lifestyle magazine reports. “Mario Batali, Jean-Georges Vongerichten, Tom Colicchio, Emeril Lagasse, Charlie Palmer, and Michael Mina—each opened his first steak house in Las Vegas,” Johnson writes. “This spring, Gordon Ramsay joined them with his first steak house, inside the Paris casino.” The result is a city where innovative chefs source the best cuts of beef, age them in-house, and prepare them using sophisticated techniques.

    To determine which Las Vegas restaurant offers “nothing less than the perfect cut of beef,” Robb Report visited 16 of the city’s top steak houses. Judging criteria included “steak that was at least an inch thick, and cooked medium-rare with a beautifully charred crust. It had to be dry-aged, deeply flavored, and rich with juices. And it had to be tender, of course, and not too lean.”

    Mario Batali’s Carnevino at The Palazzo proved to be the ultimate destination for steak lovers, and the restaurant’s 240-day, dry-aged Riserva rib eye was singled out as the best steak, according to Robb Report’s editorial team. Offering “the haunting aroma of fresh black truffles, the unmistakable scent of perfectly aged meat,” writer Johnson recalls a “magnificent and intense flavor that hints of blue cheese and foie gras.”

    While Carnevino at The Palazzo topped Robb Report’s list of seven ultimate dining destinations for steak lovers, the magazine’s other picks included:

    • The Steak House at Circus Circus
      (Best steak: 30-ounce, 21-day dry-aged bone-in rib eye)
