Tasting notes: Shows bright prune and dried apricot with luscious sweetness, racy acidity, and incredible length. Luxurious texture with amazing depth and unbelievable intensity. Worth knowing: The name of this rich dessert wine, which is a darker version of vin santo made with the prugnolo gentile grape, means “eye of the partridge,” an allusion to its deep red color. After harvest, the grapes are hung on racks to dry for six months; the wine is then aged for 10 years in barrels.
