An Appetizing All-Star Event

Satisfy your penchant for pork on July 24, when the Cosmopolitan of Las Vegas presents its first All-Star Cochon culinary event, the latest addition to the annual Cochon 555 competition series, which celebrates heritage breed pigs. Chefs and butchers from restaurants such as French Laundry in Napa Valley, Calif., Del Posto in New York City, Michael Mina in San Francisco, and more will prepare dishes made from 14 different heritage breed pigs. At $150 per person, guests can expect to savor braised pork belly with sea urchin and black vinegar glaze, gnudi of ricotta and spinach with porcini mushroom cream and truffle, and bacon cotton candy, to name a few. Butchery demonstrations, cured meats, reserve wine tasting, craft brews, and artisanal cocktails will also be on hand.

The Cosmopolitan is offering a VIP culinary package for two at $200 per person, which includes one night’s stay and early access to the All-Star event with a private wine tasting, artisan cheeses, oysters, and caviar. (877.551.7772, www.cosmopolitanlasvegas.com)
