Culminating a two-year, $140 million renovation, the New York Palace (www.newyorkpalace.com) completed two 5,000-square-foot triplex suites (from $25,000 per night) in September and November. In the Champagne Suite, a wine cave houses a rotating collection of rare Dom Pérignon vintages.
