In December, Petrossian opened its fourth outpost in the United States—in the new Tom Bradley International Terminal at Los Angeles International Airport—and its offerings include Caviar in the Air (, an insulated travel tote packed with a tin of sturgeon eggs, smoked salmon, crème fraîche, toast points, and a mother-of-pearl spoon. Prices, which vary according to the amount and type of roe desired, range from $205 for 30 grams of Royal Transmontanus to $1,581 for 125 grams of Tsar Imperial Kaluga.
