Chef Michael Mina’s newly opened Bardot Brasserie, located within the Aria Resort & Casino, launched its beverage program of signature spirits, exclusive beers, and rare wines on January 16. Striving to bring Parisian café culture—a sophisticated mélange of alcohol-fueled conversation and ruckus—and avant-garde sensibility to the Strip, the menu includes Parisian-inspired cocktails to pair with Mina’s delectable dishes.

One highlight is the Voltaire, made with Eric Bordelet cider, Grey Goose L’Orange vodka, house-made ginger syrup, and baked-apple bitters. The Storming the Bastille uses Bastille whiskey, Maurin sweet vermouth, and Bittermens coffee bitters. The drink And God Created Woman is named after the 1956 Roger Vadim and Brigitte Bardot film, and is a combination of Citadelle gin, St. Germain liqueur, angostura bitters, egg white, and a white wine–based aperitif. For the fainter of heart, the restaurant offers artisanal ales including its signature beer, Hors d’Âge, which is brewed in the village of Esquelbecq, France, in partnership with Stillwater Artisanal Ales. Rare French vintages and Cognacs dating as far back as 1811 round out the impressively thorough program. (aria.com)
