Viceroy Riviera Maya, the chic all-villa hideaway on the Mexican Caribbean, is turning up the heat for guests interested in learning about a keystone of Mexican cuisine: Cooking on wood-burning grills to bring out exceptional flavors.
“The concept of my Master Grilling Class is to teach in a professional but relaxed manner the secrets of Mexican barbecue cuisine,” said Jetzabel Rojas Barragán, the luxury resort’s head chef and grill master. “The class is very comprehensive, addressing a full range of foods and techniques.”
Chef Jetzabel takes guests on an educational journey on how to grill different types of foods, the use of woods for different flavors, and how to prepare marinades and glazes that imbue foods with mouth-watering and juicy flavors. The class comes to a delicious end with a lunch of the dishes prepared during the class paired with Mexican artisanal beers.
