It is amazing how much refined complexity can evolve from three sherry butts and three refill hogsheads, but that is what Balvenie malt master David Stewart has achieved in creating his second 40 Year Old offering. (The first was only available at duty-free shops and was not exported to America.) A candied smoothness with undertones of violets, cedar, honey, and butter toffee are held together with a sherried richness that coats the palate. Only 150 bottles have been produced, each presented in a bespoke wood box. Fifty of these have been allocated for the U.S. ($4,000)
