One of the more interesting labels to emerge from California’s very active and inspiring Central Coast region is Santa Maria–based Paul Lato, which cultivates Burgundian varietals from which Lato himself crafts splendid wines. This Pinot Noir displays balanced and rich flavors of sweet fruit and spice. ($80)
