Ritz Carlton Hong Kong celebrates white truffle season…

Tosca celebrates the white truffle season with the grand debut of White Truffle Afternoon Tea in November and December. Known as “Diamond of the Kitchen”, white truffle is highly coveted for its earthy and subtle aroma and is only in season for a limited period every year. Michelin-starred Chef Pino Lavarra joins hands with Executive Pastry Chef Richard Long to craft an irresistible menu featuring this gastronomic gem. “Fall is the white truffle season in Italy. At Tosca, we invite guests to enjoy an elevated journey of the senses and to explore time-honored Italian culinary traditions”, said Chef Pino.

Exclusively available on Saturday only, the exquisite white truffle tea set promises to take afternoon tea experience to the next level. “Burrata Cheese Risotto” is a small-bite version of the classic white truffle recipe. The intensely flavorful white truffle shavings enhance the aromatic profile of the risotto and make it a perfect mid-day snack. While white truffle is traditionally used to enhance savory dishes, Executive Pastry Chef Richard Long adds a creative twist to this edible diamond and surprises guests with a selection of sinfully delicious desserts. “Topinambur Ice Cream” is Chef Richard’s personal favorite. The mild and delicate flavors of the Jerusalem artichoke subtly shine through, while a small sprinkle of salt further enlivens the distinct aroma of white truffle shavings. The beautifully arranged “Hazelnut Nougat Cream, Meringue” is another not-to-be-missed item. The French baby pear is poached in red wine and paired with chestnut cream, crispy nougat chips and hazelnut cream to present a world of winter flavors in one bite. For guests to enjoy the white truffle season to the fullest, Tosca’s celebrated Sunday Brunch also presents “Your Very Own Whole White Truffle”, where guests can get a whole piece of white truffle and have it generously shaved on their favorite dishes from the scrumptious buffet spread. “Your Very Own Whole White Truffle” is available every Sunday from 11am to 3pm from November onwards.

About Chef Pino Lavarra

Hailing from Italy to helm Tosca at The Ritz-Carlton, Hong Kong, Michelin-Starred Chef Pino Lavarra has a wealth of experience working in renowned hotels and restaurants around the globe.  His gastronomic talents have earned him prestigious recognition including “One of the Best Chefs in the World” by the American Academy of Hospitality Sciences.  Tosca was honored with one Michelin star only eight months after Chef Pino took over as director. About Chef Richard Long

Malaysian-born Long has had a fascination for the art of chocolate and desserts from the time he was in college.  With his extensive knowledge and skills in the fine art of pastry design that he has cultivated over the past 25 years, guests can expect Long’s refined, alluring and delectable classic and contemporary desserts at The Ritz-Carlton, Hong Kong.

His passion for creating the best pastries had taken him to as far as Paris, France to L’Ecole Lenôtre, the first culinary school in France, and to the pastry kitchen of Pierre Hermé, one of the world’s most renowned French pastry chefs, to learn the best of the craft.  Long then worked for notable international hotel chains all over the world—in Malaysia, Singapore, Hong Kong, China and Turkey.
