Taste buds, take note: Fairmont Mayakoba, a five-star luxury resort in the rainforests of Riviera Maya, Mexico, is embarking on a new culinary adventure, with restaurateur Richard Sandoval at the helm. Each of the property’s four restaurants—Lobby Lounge, El Puerto, Brisas, and La Laguna—will undergo a complete revitalization spearheaded by Sandoval and his team. Two of the renovations have already been completed, and the entire project will be finished in September.
The recently reimagined Lobby Lounge now features an expanded, covered terrace next to the resort’s waterways; a bar with nightly entertainment; and delectable dishes and appetizers inspired by Latin and Asian flavors. El Puerto’s new design includes an extended deck overlooking the freshwater lagoon, a spacious indoor dining area, and two private dining rooms. The menu features sushi, ceviche, and original dishes—such as Pork Carnitas Rice Noodles and Chipotle Miso Glazed Black Cod—that can be accompanied by Latin wines, Japanese sakes, or one of more than 100 tequilas. In July, Brisas will reopen with a new raw bar, a diverse menu highlighting locally sourced seafood and meats, and a beachfront stage perfect for evening entertainment. At La Laguna, which will be finished in September, diners will be treated to a tequileria, an open-concept kitchen, and Mexican-inspired craft cocktails.
When not indulging in some of the area’s finest dining, guests can walk along the scenic beach near one of the world’s largest reefs, hike a nature trail, or unwind in the resort’s 20,000-square-foot spa and treatment facility. (fairmont.com)
