Hacienda de San Antonio Appoints Gonzalo Mendoza as Executive Chef

Hacienda de San Antonio, a luxury retreat located at the foot of Mexico’s majestic Volcan de Fuego, is pleased to announce the appointment of Gonzalo Mendoza as Executive Chef. Mendoza’s esteemed career spans more than two decades with exceptional culinary expertise earned at some of the world’s finest resorts.

Prior to joining Hacienda de San Antonio, Mendoza served as the Executive Chef at Rancho La Puerta in Baja California. During his 20-year tenure at the property, he created and implemented a menu that was widely praised for its approach to healthy living and balanced nutrition. At Hacienda de San Antonio, Mendoza continues to utilize his affinity for presenting healthy cuisine with an international flair. His style blends perfectly with the resort, and ideally showcases the property’s organic ingredients, grown on site, in a sophisticated way.

“Hacienda de San Antonio is one of the few properties in the world that produces 100 percent sustainable products and focuses on biodynamic agriculture, which means I can pick immediately available ingredients to create a daily menu that truly makes me proud,” said Chef Mendoza. “Each element is grown and produced with tremendous love and care, setting the foundation for well-rounded dishes that guests can experience with all of their senses.”

Additionally, Mendoza will work in tandem with the culinary team at Cuixmala, the Hacienda’s sister property located on the Pacific Coast of Mexico. The resorts will each utilize their own location to enhance the menu of the other, sharing their home grown fruits, vegetables, coffee, cheese and fresh-caught seafood.

Chef Mendoza studied at the Culinary Institute of America in both Hyde Park and San Francisco, and is a Cordon Bleu trained chef.
