He wanted to cook for people in need using food that would have otherwise been discarded—such as when meat that was still good, but approaching its expiration date, or bruised vegetables that would have trouble selling in the market. So he opened a soup kitchen, Reffetorio Ambrosiano, and called on some of the world’s best chefs to pass through and use their creativity and skill to make delicious meals out of what was available in the kitchen.
In Bread is Gold he recounts the stories of the chefs who came through from Daniel Humm to Rene Redzepi to Ana Ros to Mario Batali and more. It’s a book that’s as inspirations as it is informative.
