It’s no different with his butcher shop Publican Quality Meats. His team does whole-animal butchery on site, and features a wide variety of meats including duck, chicken, pork, and beef—all from local farms. As an added bonus to Windy City residents planning a cookout, Publican also has an excellent charcuterie program to make appetizers easy as well.
