Rome is a city that loves its fried snacks, and a winery just outside the city, Tenuta di Fiorano, makes a white wine that Wooden believes nicely complements the fritto misto—lightly battered fresh calamari, shrimp, and scallops with lemon and herbs—that Carbone loves to serve at his feast. “The winery does this 50/50 blend of Grechetto and Viognier. What I really love about this wine is the aromatics. There’s an herbal character to it, but it’s very fresh, very floral,” Wooden says. “I think the Viognier goes nicely with the richness of fried seafood, then you have the Grechetto coming in to kind of save the day with acidity to keep things fresh and clean.”
