Speaking of sui mei, Yat Lok is a must-visit when in Hong Kong. There are seasonal vegetable sides and rice and soup, but you come to this restaurant to eat meat. The problem is, with this style of cooking, most places you’ll visit will have dry meat. Not at this Michelin-starred spot. They have great goodies like barbecue pork and soy sauce chicken, but they’re best known for their roast goose. Goose is pretty lean, making it one of the hardest birds to cook. At Yat Lok, their level of care is high and their technique is on point. So you get goose that’s well-seasoned and tender. It just hits the spot.
