Jörg Rupf, scion of a German family of master distillers, arrived in California in 1982 with a modest Holstein pot still. Now operating from a former naval aviation hangar near San Francisco, Rupf crafts the stunning Aqua Perfecta line of eaux-de-vie, grappas, and liqueurs. His production is unusual because he fortifies each liqueur with brandy that is made from the same fruit, a process that intensifies the flavors. The gorgeous, aromatic Aqua Perfecta Framboise Liqueur, made from Washington state Meeker raspberries, explodes with the essence of the fruit. It makes a smashing cocktail when added to Champagne.
