The new Champagne bar at London’s May Fair Hotel does not pour bubbly by the glass, serve fizzy cocktails, or, for that matter, even have a bar. Dubbed 150 at the May Fair (, the intimate sunken lounge within the hotel’s May Fair Bar offers vintage Champagne by the magnum (as well as magnums of Belvedere vodka). The centerpiece of 150 is a floor-to-ceiling glass refrigerator that chills the 1.5-liter bottles of Ruinart, Krug, Moët & Chandon, and other labels. The two four-course canapé menus by the May Fair’s chef, Silvena Rowe, pair specifically with Dom Pérignon’s Vin­tage 2000 (the menu includes lobster with tropical salsa and cumin-flavored crème fraîche) and Vintage Rosé 1998 (pomegranate-glazed foie gras).
