An Irish whiskey resurgence is afoot. Irish whiskey (spelled with an e, unlike Scottish “whisky”), which is triple distilled and usually unpeated, has been gaining popularity in recent years. Following the Irish Civil War (June 1922 to May 1923) and Prohibition in the United States (1920 to 1933), Irish whiskey plunged into semi-obscurity. But today, new generations of drinkers and mixologists have discovered the Emerald Isle spirit, the libation of choice on St. Patrick’s Day, March 17. As a result of Irish whiskey’s renewed popularity, new distilleries are being built in Ireland; old ones are being reopened or expanding; and a new range of whiskeys are being poured for aficionados of Ireland’s national spirit. Here are three of the newest and best Irish whiskeys for St. Patrick’s Day (or Lá Fhéile Pádraig, as it is called in Ireland).
