Dalmore master distiller Richard Paterson is an alchemist when it comes to blending single malts that have matured in different barrels in the distillery’s warehouses. His past accomplishments include the 12 Year Old and the Gran Reserva, both created with carefully crafted combinations of whiskies aged in ex-bourbon barrels and Spanish sherry casks. But Paterson has outdone himself with The Dalmore King Alexander III (www.thedalmore.com, $250). This masterpiece is a compilation of whiskies aged in French wine barriques, Madeira drums, sherry butts, Sicilian Marsala barrels, port pipes, and bourbon barrels for the past 20 to 40 years. Each wood type brings its own personality into the mosaic: Sherry butts and drums add citrus and nuts, bourbon barrels bring smoke and vanilla, port pipes add a hint of wild plums, and Cabernet Sauvignon barrels impart red berries and cedar.
