Tasting notes: A close relative of Hungarian Tokaji. Shows deep, sun-ripened concentration and magnificent mineral-laced terroir. Worth knowing: This wine’s name refers to the town of Rust on Austria’s Neusiedlersee, where humid conditions favor the growth of the desirable botrytis cinerea fungus, and to the late-harvest style, ausbruch, a term indicating that the botrytised grapes have been “broken out” from the clusters. Sugar levels required for this designation place these wines between a German beerenauslese and trockenbeerenauslese in sweetness.
