Most Scotch-whisky experts agree that a few drops of water in a dram can release complex flavors and aromas hidden within the spirit. Now Uisge Source (www.uisgesource.com) is producing bottled waters drawn from Scotland’s three major whisky regions: Speyside, Islay, and the Highlands. Each varies naturally in mineral content and pH, and is intended to unleash the flavors of that region. “Adding water from the same source,” says Bill Lumsden, master distiller for Glenmorangie and Ardbeg, “can only help protect the integrity of the spirit.” Uisge Source (pronounced oosh-guh) sells 3.38-ounce bottles for about $6.50 each.
