The newly renovated Timber Cove resort (timbercoveresort.com) in Jenner, Calif., overlooking the crashing waves of the Sonoma Coast, has debuted its Hirsch Room, where guests may experience vintages by nearby acclaimed winemaker Hirsch Vineyards. At the Sebastopol seafood spot Handline (handline.com), that old menu brag about “pristine local ingredients” is simply accurate. Hog Island oysters, raw or grilled, taste fresh from the surf, and rockfish ceviche brims with seasonal citrus. Chef Perry Hoffman’s new Let Us Cook! menu (four courses for $83, including wine pairings) at Shed (healdsburgshed.com) changes nightly, depending on what catches his eye—perhaps tender smoked pork loin and belly, scattered with spigarello, mustard flowers, shaved radish, and brussels sprouts, all drizzled with a delectable mustard-caper sauce. In the summer, a new garden dining patio will be the place to be.
