Grand Openings: Raising the Roof

The views at Restaurant Terrazza Danieli—which, from the rooftop of the Hotel Danieli, overlooks Venice’s Grand Canal, the campanile in St. Mark’s Square, and the lagoon islands of La Giudecca and San Giorgio Maggiore—often upstaged the eatery’s cuisine. That situation changed last year, when chef Gian Nicola Colucci arrived in the midst of a six-month renovation that concluded with Terrazza Danieli’s reopening in June. Though Italian-born, Colucci brings Asian influences to traditional Venetian dishes. He spices his tomato consommé, for instance, with mint and lemongrass and then pours the soup over potato ravioli filled with sheep’s-milk cheese. The Danieli, originally a 14th-century doge’s palace, was converted in 1822 to one of Venice’s finest hotels, and Colucci’s cooking philosophy fits right in: “It is how to use the old recipes,” he says, “and give them some creativity and a new interpretation without losing their essence.” Restaurant Terrazza Danieli, +39.41.522.6480, www.starwoodhotels.com
