In the Dining room, Mexico-born chef Martin Rios adds to the hotel’s local flavor with his modern take on Southwestern cuisine. The New Mexican experience continues with the help of the property’s new adventure concierge, who can arrange hot-air balloon rides over the high desert and helicopter flights over Anasazi ruins.
