Viceroy Zihuatanejo has expanded its precedent-setting ‘Way to Wellness’ program with a Vegan Market Excursion, personally escorted by Executive Chef Eduardo Avila.
The chic resort on Mexico’s Pacific coast, which offers the destination’s only dedicated vegan and vegetarian menus, just launched a ‘Way to Wellness,’ a comprehensive, unsurpassed guest program for a healthy and rejuvenating vacation. The program offers an array of activities, including cooking classes and healthy cuisine that emphasizes fresh fruits, vegetables and fish. Other components include mindful meditation, healing spa treatments, hatha and aqua yoga, exercise, sports and beach activities.
With the Vegan Market Excursion, guests are taken by Chef Avila to Zihuatanejo’s bustling central market to meet local farmers and talk to them about their organic products, taste a variety of products such as soy beans and vegetables grown without pesticides, and shop for ingredients to prepare a special lunch menu at the resort, which may include an energy drink, smoothie, salad, entrée and dessert. Following the trip to the market, the guests enjoy the farm-fresh, healthy vegan lunch at a table on the beach at the resort.
“With our ‘Way to Wellness’ program, we made a major commitment to providing guests with the opportunity to turn their vacation into a health and wellness experience, and vegan options are integral to the concept,” said General Manager Martin Kipping. “Today’s vacationers expect healthy and nutritious dining options, and they enthusiastically embrace every opportunity to learn more about a culture’s cuisine.”
Chef Avila continues to innovate and add new recipes to the vegan menu – including Cactus Paddle Salad and Quinoa and Couscous Tabouleh. The recipes are available on the Wellness page on the Viceroy Zihuatanejo website: http://www.viceroyhotelsandresorts.com/en/zihuatanejo/spa_and_wellness/w…
The ‘Way to Wellness’ program at Viceroy Zihuatanejo is directed by Edward A. Taub, M.D., a wellness pioneer and leading authority of the discipline whose Wellness Medical Institute developed “The Wellness Solution” based on Nobel Prize science.
